Imagine being allowed to place whisky barrels in the bishop’s old cellar, built by monks in the 1400s.
A historical site that stands with white vaults and cobblestone floors, as it was constructed hundreds of years ago. A place where Hans Tausen once walked. Imagine being allowed to place whisky barrels in Brewer Baur’s caves, where the Polish-born brewmaster Peter Bauer brewed Bavarian beer.
Can one make whisky and connect it with Viborg’s fascinating history? Can one make whisky and call it the Bishop’s Whisky?
These were some of the questions I decided to find answers to, and that’s where my journey began.
My name is Jimmy Steen Rasmussen, and I am the man behind this new distillery in the city of kings, Viborg. I look forward to sharing this adventure with you and taking you all along on the journey that lies ahead.
My own journey started back in the fall of 2023, when the idea of making whisky first arose. However, I had more in mind than just making whisky. In recent years, Denmark has seen a boom in whisky distilleries across the country, but how does one avoid becoming just another one in the crowd?
Well, I live in Viborg, I love my city and everything it has to offer. Not least the entire history, the city of kings has had since the beginning of time. Viborg, with its rich history, has an array of old locations, buildings, and historical sites that were just waiting for me and called out to me.
Already now, Viborg Whisky Distillery has ventured far and wide. Together with a number of interesting and passionate people, I have found some of the best historical sites in Viborg to age our whisky.
Then there’s the whole aspect of whisky production, because how exactly does that work? Is it something you just do? And where do you actually start? Is it all just water, grain, and yeast? No, it certainly is not.
